Crazy Cake
1 ½ cups flour
1 cup sugar
3 Tbsp unsweetened cocoa
1 tsp baking soda
½ tsp salt
1 cup cold water
6 Tbsp vegetable oil
1 Tbsp vinegar
1 tsp vanilla
Sift dry ingredients together. Add rest. Mix. Bake at 350 degrees for 30 minutes.
This cake is named so because all ingredients are mixed directly in the cake pan ( 8x8 square or 8" round works best). There is no clean-up! However, I prefer to mix all in a bowl and then turn into pan.

Cheryl's Pumpkin Bread
3 cups flour
2 ¼ cups sugar
1 teaspoon soda
3 teaspoons cinnamon
3 teaspoons cloves
1 (14 oz can) pumpkin (not pie filling!)
4 eggs, slightly beaten
1 ¼ cups vegetable oil
2/3 cup raisins (optional)
2/3 cup chopped nuts (optional)
Preheat oven to 350 degrees.
Combine all dry ingredients in large bowl; blend together.
Make well in center and add pumpkin, eggs and oil. Mix well.
Add raisins and nuts as desired.
Lightly spray loaf pans with Pam. Divide batter.*
Bake at 350 degrees about 1 hour or until done.
*This makes two large loaves or three medium-size loafs. Not sure how many small ones.
Batter should fill tins at least half full, maybe a bit more!
Cream Puffs:
Pastry:
1 cup water
1 stick butter
½ tsp salt
1 cup flour
4 eggs
Preheat oven to 400 degrees.
Bring water to a boil in saucepan. Add butter and salt.
When butter has melted, add the cup of flour; cook, stirring constantly until dough forms a good ball and follows the spoon around the pan. Cook another few minutes or so but do not let flour brown. Remove from heat. Add eggs, one at a time, stirring until egg is completely incorporated into dough.
Drop dough onto baking sheet, using two spoons to make a nice mound.
Bake at 400 for 10 minutes. Reduce heat to 350 degrees and bake another 20-25 minutes. Puffs should be brown and crispy looking (tap lightly).
Filling: Puffs can be filled with ice cream or vanilla pudding (recommend cook & serve).

Chocolate Ganache:
12 oz. semi-sweet chocolate morsels
1 cup heavy cream
Heat cream to a boil in small saucepan. Pour over chocolate morsels in large bowl. Stir with whisk until chocolate melts and mixture becomes smooth and beautiful! Gently spoon over filled puffs, letting ganache slowly run down the sides. Yum!
Applesauce Cake:
1 cup sugar
1 cup applesauce*
½ cup vegetable oil
1 ½ cup flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
1 teaspoon cloves
1 teaspoon nutmeg
Mix sugar, applesauce and oil in a large bowl.
Measure and combine dry ingredients.
Add dry ingredients to sugar mix. Mix just 'til all ingredients are combined.
Turn into a lightly greased large loaf pan.
Bake at 350 degrees 45-55 minutes, or 'til center is done.
Cool in pan about 10 minutes. Turn out on rack to cool.
Eat!
